Chickpea 'n coconut curry

  • 16 oz (2 cups) cooked chickpeas
  • 1 can unsweetened coconut milk
  • 1 ripe, medium tomato, chopped
  • 1 medium carrot, diced
  • 2 tsp turmeric
  • big pinch cinnamon
  • pinch ground cloves
  • 2 garlic cloves, crushed

Step 1

Mix everything together in a saucepan.
Bring to a boil, then lower the heat and simmer, covered, for 30 mins.
Mash or puree in a blender, then serve over rice or quinoa.

Note: We cook this for the whole family, adding a little salt for the grown ups.
