This Dill Pasta Salad is Perfect for Weekend BBQs

This salad is the perfect lunch for a barbecue or a light dinner during the summer months.

Ingredients (for 2 people)

  • 3 cups farfalle pasta
  • 1 cucumber
  • 2 1/2 cups radish 
  • 1 shop-bought packet of feta
  • 1/2 cup bean sprouts
  • 1/2 cups walnuts
  • 1/2 cup fresh dill
  • 2 lemons (juiced)
  • 2 garlic gloves (chopped)
  • 4 tbsp olive oil
  • 1/2 cup argula

Dive into summer with this fresh, light and healthy mango salad!

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
