Pressure cooking can be intimidating if you're unsure how to use this cooking apparatus, which has existed since the 17th century! It allows you to cook food quickly under high pressure steam, using water or a water-based cooking liquid, in a sealed vessel. As the temperature of the liquid rises and it begins to boil, steam builds up inside the pressure cooker. This method allows the food to be cooked at temperatures well above 100°C (212°F), which results in a drastically reduced cook time.

To control the internal pressure and prevent over-pressurization, each pressure cooker is equipped with a safety valve designed to partially release the steam inside. This prevents the device from exploding, which can be very dangerous and scary. Fortunately, modern-day pressure cookers have become extremely secure and easy to use and are sold with multiple safety features. Many also no longer vent steam during the cooking process.
