Strawberry and Basil Cream Yogurt Cake

Basil adds a welcome hint of freshness to strawberries in this stunning yogurt cake that will wow your friends and family.

Ingredients: 

For the whipped basil cream:

  • 1 2/3 cups light cream (30% fat)
  • 16 fresh basil leaves
  • 2 cups white cooking chocolate

For the cake:

  • 1 cup yogurt
  • 3 cups flour
  • 1 tbsp baking powder
  • 1 cup sugar
  • 1/2 cup grapeseed oil 
  • 6 eggs
  • 1 lime
  • 2 cups strawberries
  • A few extra basil leaves, to garnish


Instructions:

  1. Prepare the basil cream the day before: Bring the cream to a boil in a saucepan. Remove from heat, add the basil leaves and cover the pan. Let cool. When the cream has cooled completely, remove the basil leaves and press them well to infuse their flavor into the cream.
  2. Cut the white chocolate into small pieces. Bring the cream to a boil again, and working in 3 batches, pour over the chocolate, mixing well between each addition until the chocolate is melted. Strain the cream and store in the fridge overnight.
  3. The next day, preheat the oven to 375°F.
  4. For the cake: Add the yogurt, flour, baking powder, sugar, oil, eggs lime zest to a bowl. Mix until a smooth batter forms.
  5. Grease and flour a nonstick cake pan. Pour the batter into the cake pan and bake in the preheated oven for 45 min.
  6. Let the cake cool slightly before removing from the pan. Set aside.
  7. Using a food processor or electric whisk, whip the basil cream until stiff peaks form. Transfer to a piping bag.
  8. Place the cake on a serving plate and decorate with the whipped basil cream, piping out small dots across the surface. Garnish with more fresh sliced strawberries and basil leaves.

  • 7-9 medium-sized strawberries
  • 1 puff pastry
  • 1 chocolate bar
  • 1 egg yolk
  • Almond slivers
  • Powdered sugar

Method

  1. Preheat oven to 350°F.
  2. Cut the strawberries into halves.
  3. Dust some flour on a flat surface and spread your puff pastry out on top, smoothing it into a rectangle shape if necessary.
  4. Place the bar of chocolate in the center, then top with a layer of strawberry halves.
  5. Using a pizza cutter or a knife, slice the edges of the puff pastry into strips that can be wrapped over the chocolate and strawberries. Starting with the flap at the top, fold over each strip in a slightly diagonal direction so that they resemble a braid.
  6. Brush the braid with a beaten egg yolk so that it covers the entire visible surface.
  7. Sprinkle almond slivers on top.
  8. Bake for 20-22 minutes.
  9. Give the braid a few minutes to cool down, then cover with a dusting of powdered sugar.
  10. Serve and enjoy!
