Coconut Panna Cotta with Strawberry Sauce

Try this exotic twist on panna cotta with the rich flavor of coconut milk and fresh strawberries. It's a great light dessert we can't get enough of!

Ingredients for 4 servings: 

  • 3 gelatin sheets
  • 1 vanilla bean
  • 1 organic lime, grated
  • 1/4 cup coconut milk
  • 1 1/2 cups heavy cream
  • 1/3 cup sugar
  • Zest of 1/2 a lime
  • 3/4 lb. strawberries
  • Juice of one lime
  • 1/4 cup powdered sugar
  • 4 glasses 


Instructions: 

  1. Soak the gelatin sheets in cold water. Split the vanilla bean lengthwise and scrape out the seeds. Wash the lime and finely grate the zest all over.
  2. Add the coconut milk, heavy cream, sugar, lime zest and vanilla seeds to a saucepan and heat over medium heat for 5 min. Remove from heat.
  3. Drain the gelatin and add to the saucepan. Using an immersion blender, mix all the ingredients together and let cool in the pan for 25 min.
  4. Pour the panna cotta mixture into the glasses. Cover with cling film and let set in the fridge for 6 hours.
  5. For the strawberry topping, wash and hull the strawberries. Using an immersion blender (or a regular blender) finely purée the strawberries with the lime zest, lime juice and powdered sugar.
  6. Pour on top of each coconut panna cotta, and serve.
  7. Enjoy!

Ingredients

  • 7-9 medium-sized strawberries
  • 1 puff pastry
  • 1 chocolate bar
  • 1 egg yolk
  • Almond slivers
  • Powdered sugar

Method

  1. Preheat oven to 350°F.
  2. Cut the strawberries into halves.
  3. Dust some flour on a flat surface and spread your puff pastry out on top, smoothing it into a rectangle shape if necessary.
  4. Place the bar of chocolate in the center, then top with a layer of strawberry halves.
  5. Using a pizza cutter or a knife, slice the edges of the puff pastry into strips that can be wrapped over the chocolate and strawberries. Starting with the flap at the top, fold over each strip in a slightly diagonal direction so that they resemble a braid.
  6. Brush the braid with a beaten egg yolk so that it covers the entire visible surface.
  7. Sprinkle almond slivers on top.
  8. Bake for 20-22 minutes.
  9. Give the braid a few minutes to cool down, then cover with a dusting of powdered sugar.
  10. Serve and enjoy!
