Light Ratatouille

Ratatouille is a French classic, a rather good Disney movie, and your ally for a healthy summer! Packed with colorful veggies and summer flavors, it's also full of vitamins and fiber that will help your metabolism.

Ingredients (for 4 people):

  • 1 red bell bell pepper (diced)
  • 2 zucchini (sliced)
  • 1 small eggplant
  • 1 onion (sliced)
  • 2 ripe tomatoes (quartered)
  • 1/2 cup mushrooms (quartered)
  • 1 cup strained tomatoes
  • 2 tbsp fresh basil (finely chopped)
  • Salt and pepper

Instructions:

  1. Put all the vegetables in a large pot with the strained tomatoes, basil, salt and pepper.
  2. Bring to a boil, cover, and simmer for 20 mins. until the vegetables are tender.
  3. Serve as a dip with crusty bread, or with baby potatoes, rice, or pasta.

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
