Bircher Muesli

A Swiss original that is super tasty and will make sure you start the day with a heap of energy! It will also keep you full until your next meal, so you won't have to worry about niggling cravings until then.

Ingredients (for 6 people):

  • 1/2 cup rolled oats (tender of crunchy depending on what you like)
  • 1 1/2 cups milk
  • 1/4 cup apple juice
  • 3 tbsp lemon juice
  • 1 apple (cored and sliced)
  • 2 tbsp honey
  • 1 1/2 cups natural or Greek yogurt
  • Handful of dried fruits (e.g. berries, raisins, hazlenuts etc)

Instructions:

  1. Whisk together the oatmeal, milk, apple juice, and lemon juice in a bowl and refrigerate overnight.
  2. The following morning, mix in the honey and yogurt, and layer the apple on top.
  3. Serve with your desired fruits and nuts sprinkled on top.

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
