Easy Tomato and Tapenade Tartlets

Our fave appetizer at the moment! These savory little tarts made with tomatoes and olive puree is delicious, and is perfect at a summer dinner party. 

Ingredients (for 6 people):

  • 2 cups cherry tomatoes (halved)
  • 1 tsp olive oil
  • 1/4 tsp herbes de Provence
  • 1/2 17.3-oz. pkg. puff pastry (thawed)
  • 6 tsp black olive tapenade
  • 9 tsp prepared hummus
  • Salt and pepper (for seasoning)

Instructions:

  1. Preheat oven to 425°F. Line baking sheet with parchment paper, or spray with cooking spray.
  2. In a bowl, toss in the cherry tomatoes and drizzle over the olive oil. Season with salt and pepper and set aside.
  3. Cut the puff pastry into 3 1/2- inch circles, you can use the lips of a mug of small bowl for this. Transfer to the baking sheet and prick each round with a fork.
  4. Spread 1 tsp of tapenade and 1 1/2 tsp hummus onto each round of puff pastry. Top each round with 8 cherry tomato halves. Bake for 20 mins. until the crusts are golden. 
  5. Serve and enjoy!

Did you know you can toast sweet potato slices... and it's absolutely delicious!

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
