Veal stew

Craving some veal stew but don't have the patience to let the meat cook for an hour? Break out the pressure cooker! Simply toss the meat (already blanched) in the saucepan with some vegetables and herbs. Put the lid on, and let cook for 15 to 20 minutes. Then all you have to do is prepare the sauce by making a roux to which you add just a few ladles of cooking broth and cream. If you want to thicken it up a bit, add two egg yolks to the sauce. Mushrooms would make an especially good veggie choice for this recipe.
