Carrot soup

Vegetables can be made into delicious soups, but some of them take a while to cook. In order to shorten the process, put hard-to-cook veggies, such as carrots, in your pressure cooker (you don't even need the steamer basket for this!). Brown the carrots with potatoes in the saucepan using a little oil. Add broth, and turn on the pressure to warm the soup quickly. You can either leave it as is or purée the vegetables for a soft consistency.
