Ratatouille

This is one for the summer! Ratatouille might be difficult for Anglophones to pronounce, but the taste makes up for it. It's made with eggplant, zucchini, and tomato which are arranged on a circle in a baking tray, drizzled with a little olive oil, seasoned with Provencal herbs, and then put in the oven to bake. Voilà!
