Roasted Vegetable Winter Panzanella

If you want to use up stale bread and any winter veggies that are hanging about, this sheet pan recipe is for you. Simply tear up the bread, drizzle with olive oil and butter, season and bake before doing the same with the veggies. Once done, toss together and drizzle over a little lemon Parmesan vinaigrette.
