Strawberry Shortcake

A timeless summertime dessert, strawberry shortcake is a perfect balance of flaky, buttery biscuits, sweet macerated strawberries, and light, airy whipped cream. With its delicate texture and bright berry flavor, this old-fashioned favorite is as refreshing as it is indulgent. Strawberry shortcake dates back generations, loved for its simple elegance and fresh ingredients. The combination of tender biscuits, ripe strawberries, and homemade whipped cream makes it a staple in Southern kitchens and beyond.

Ingredients (for 6 servings):

For the Biscuits:

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup heavy cream
  • 1 tsp vanilla extract

For the Strawberries:

  • 1 lb fresh strawberries, hulled and sliced
  • ¼ cup granulated sugar
  • 1 tsp lemon juice

For the Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions:

  1. In a bowl, toss sliced strawberries with sugar and lemon juice. Let sit for 30 min, stirring occasionally, until the juices are released.
  2. Preheat oven to 400°F (200°C). In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Stir in heavy cream and vanilla extract until just combined. Turn the dough onto a floured surface, gently knead, and pat into a ¾-inch thick round. Use a biscuit cutter or glass to cut out 6 biscuits.
  4. Place biscuits on a lined baking sheet and bake for 12-15 min, or until golden brown. Let cool slightly.
  5. In a chilled bowl, beat heavy cream, powdered sugar, and vanilla until soft peaks form.
  6. Slice each biscuit in half, spoon strawberries and their juices over the bottom half, add a dollop of whipped cream, and top with the other biscuit half. Finish with more strawberries and cream.
  7. Serve immediately for the freshest taste!
