Cucumber Salad with Shrimp

Ingredients (serves 4)

  • 4 green apples
  • 4 celery stalks
  • 1 red onion (optional)

  • 1 tbsp mustard
  • A splash of lemon juice
  • Salt and pepper to taste

Instructions

  1. Peel and dice the apples and cucumber, then place them in a large salad bowl.
  2. Finely chop the celery and red onion. If a milder taste is desired, soak the red onion in a bowl of water.
  3. In a separate bowl, mix the yogurt, mayonnaise, mustard, lemon juice, salt, and pepper, then season to taste.
  4. Stir all the salad ingredients, including the shrimp, into the dressing until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
