Green Spring Salad

This green salad is a delightful celebration of spring and packed with health benefits. It combines delicious green vegetables, and you can easily add other green favorites like peas or green bell peppers if you wish.

 

Ingredients (serves 4)

  • 2 zucchini
  • 1 cup shelled beans
  • 2 avocados
  • 6 cups arugula
  • 1/2 cup Parmesan
  • 1 tbsp chopped chives
  • 1 lemon
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Start by carefully washing the zucchinis and using a peeler or grater to cut them into thin, long strips resembling tagliatelle.
  2. Place the beans in 2 cups of boiling water, cook for 15 minutes, then drain.
  3. Cook the zucchini strips in boiling water for a few minutes. Remove from the pot and drain.
  4. Halve the avocados, remove the pit, and cut the flesh into thin slices.
  5. For the dressing, mix olive oil, salt, pepper, and the juice of the lemon. Wash and finely chop the chives.
  6. Arrange the zucchini tagliatelle, beans, arugula, avocado slices, and chives on a plate and drizzle with the vinaigrette.
  7. Top with fresh Parmesan shavings.
