Ingredients (serves 4)
2 cups cooked pasta
1 pack mozzarella balls
1 handful olives (optional)
2 cups cherry tomatoes
1/2 red bell pepper
1 handful arugula
4 tbsp olive oil
2 tbsp balsamic vinegar
1 handful mint
Salt and pepper to taste
Instructions
Dice the cherry tomatoes, bell pepper, and mozzarella balls. Slice the olives if using, and place them all in a salad bowl.
Add the cooked and cooled pasta to the bowl.
Mix in the olive oil, balsamic vinegar, and seasonings, and adjust to taste. Wash and finely chop the mint.
Just before serving, fold in the fresh arugula and mint.
