Coleslaw

A classic and refreshing side dish perfect for barbecues, picnics, or as a crunchy addition to any meal.

Ingredients (serves 4)

  • 1 medium green cabbage (about 2 lbs)
  • 2 large carrots
  • 1 small red onion
  • 1 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp sugar
  • Salt and pepper to taste

Instructions

  1. Remove the outer leaves from the cabbage and cut it into quarters. Remove the core and thinly slice the cabbage.
  2. Peel the carrots and grate them using a box grater or food processor.
  3. Peel and finely chop the red onion.
  4. In a large bowl, combine the sliced cabbage, grated carrots, and chopped onion.
  5. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
  6. Pour the dressing over the cabbage mixture and toss to coat evenly.
  7. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
  8. Serve chilled as a side dish or topping for sandwiches and burgers.
