10 Refreshing Spring Salads to Brighten Your Table

Coleslaw
A classic and refreshing side dish perfect for barbecues, picnics, or as a crunchy addition to any meal.
Ingredients (serves 4)
- 1 medium green cabbage (about 2 lbs)
- 2 large carrots
- 1 small red onion
- 1 cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp sugar
- Salt and pepper to taste
Instructions
- Remove the outer leaves from the cabbage and cut it into quarters. Remove the core and thinly slice the cabbage.
- Peel the carrots and grate them using a box grater or food processor.
- Peel and finely chop the red onion.
- In a large bowl, combine the sliced cabbage, grated carrots, and chopped onion.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
- Pour the dressing over the cabbage mixture and toss to coat evenly.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
- Serve chilled as a side dish or topping for sandwiches and burgers.
