Blueberry Cornmeal Cobbler

Ingredients (for 6-8 servings):

For the Filling:

  • 4 cups fresh or frozen blueberries
  • ½ cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract
  • ½ tsp cinnamon

For the Topping:

  • ¾ cup all-purpose flour
  • ½ cup cornmeal
  • ¼ cup sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 4 tbsp cold butter, cubed
  • ½ cup buttermilk

Instructions:

  1. Preheat oven to 375°F. Lightly grease a baking dish.
  2. In a bowl, mix blueberries, sugar, cornstarch, lemon juice, vanilla, and cinnamon. Pour into the baking dish.
  3. In another bowl, whisk flour, cornmeal, sugar, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined.
  4. Drop spoonfuls of the cornmeal mixture over the blueberry filling.
  5. Bake for 35-40 min. until the topping is golden and the filling is bubbling. Let cool slightly before serving.
