Raspberry Cobbler Tart

This raspberry cobbler variation combines a buttery, golden crust with a sweet-tart raspberry filling and a crisp, crumbly topping. With its jammy raspberry center and buttery crumble topping, it is a simple yet stunning dessert that’s sure to impress! Baked into easy-to-slice bars and finished with a light dusting of powdered sugar, it’s the perfect treat for spring gatherings or a simple afternoon pick-me-up.

Ingredients (for 9-12 bars):

For the Crust:

  • 1 ½ cups flour
  • ½ cup rolled oats
  • ½ cup sugar
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 10 tbsp unsalted butter, melted

For the Filling:

  • 1 ½ cups raspberries (fresh or frozen)
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • ½ tsp vanilla extract

For the Garnish:

  • Powdered sugar, for dusting

Instructions:

  1. Preheat oven to 350°F. Line an 8-inch square pan with parchment paper.
  2. In a bowl, mix flour, oats, sugar, cinnamon, and salt. Stir in melted butter until crumbly.
  3. Press ? of the mixture into the pan to form a firm crust. Bake for 12 min., then set aside.
  4. In another bowl, toss raspberries with sugar, cornstarch, lemon juice, and vanilla. Spread over the crust.
  5. Spread the remaining crumble mixture on top evenly.
  6. Bake for 30-35 min. until golden and bubbly. Let cool completely.
  7. Dust with powdered sugar before slicing.
