Ingredients (for 4 servings):

  • 1 cup couscous
  • 1 cup boiling water
  • 1 can chickpeas, drained
  • 1/4 cup chopped parsley
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions:

  1. Pour boiling water over couscous in a bowl. Cover and let sit for 5 minutes, then fluff with a fork.
