Ingredients (for 4 servings):
1 cup couscous
1 cup boiling water
1 can chickpeas, drained
1/4 cup chopped parsley
2 tbsp olive oil
Juice of 1 lemon
Salt and pepper, to taste
Instructions:
Pour boiling water over couscous in a bowl. Cover and let sit for 5 minutes, then fluff with a fork.
Stir in chickpeas, parsley, olive oil, lemon juice, salt, and pepper.
