Ingredients (for 4–6 servings):
2 cups cooked rice, cooled
1/2 cup peanuts
1/4 cup raisins (optional)
2 tbsp olive oil
1 tsp curry powder
Salt and pepper, to taste
Instructions:
In a large bowl, mix rice, and raisins, and peanuts.
Whisk oil with curry powder, salt, and pepper.
Toss with rice mixture and store in a container with a tight lid.
