Cloud Eggs

Cloud Eggs are little breakfast works of art: fluffy, almost meringue-like egg whites baked until golden, with a rich, runny yolk sitting like a golden sun in the center. This Instagram-worthy dish actually has its roots in French cuisine (Oeufs en neige) and is as light and protein-packed as it is beautiful. Perfect for a special breakfast or brunch that feels effortless yet impressive.


Ingredients (serves 4):

  • 4 large eggs
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 tablespoon freshly grated Parmesan cheese


Instructions:

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Carefully separate the egg whites from the yolks, keeping each yolk in its own small bowl (be gentle—you’ll need them intact later).
  3. Beat the egg whites with a pinch of salt using a hand mixer or whisk until stiff peaks form. If you like, gently fold in the Parmesan for a cheesy twist.
  4. Spoon the whipped egg whites into four “clouds” on the baking sheet, using the back of a spoon to make a small well in the center of each.
  5. Bake for about 3 minutes, until the clouds are just starting to turn golden.
  6. Remove the tray from the oven and carefully slide a yolk into each well. Return to the oven for another 2–3 minutes, depending on how runny you like your yolks.
  7. Sprinkle with freshly ground pepper and herbs, if desired. Serve immediately—delicious on toast, with avocado, or as part of a brunch spread.
