Bolognese Zoodles

A true pasta classic with a twist. Zoodles are noodles made from zucchini, transforming vegetables into a wonderful new favorite dish. With Bolognese sauce, even zucchini becomes a hit.

 

Ingredients (serves 4):

  • 1 onion
  • 1 garlic clove
  • 1 carrot
  • 1 celery stalk
  • 7 oz mixed or vegan ground meat
  • 1/2 cup tomato sauce
  • 2.5 tbsp tomato paste
  • Dried oregano
  • 2 zucchini
  • Parmesan cheese
  • Salt and pepper to taste

 

Instructions:

  1. Peel and finely chop the onion and garlic. Peel the carrot, wash the celery, and dice both into small cubes.
  2. Sauté the onion and garlic in a pan with olive oil. Gradually add the ground meat, carrot, and celery, and briefly cook everything together.
  3. Add the tomato sauce and tomato paste, seasoning with salt, pepper, and oregano.
  4. Let the sauce simmer on low heat for half an hour. Meanwhile, prepare the zoodles by spiralizing the zucchinis and cooking them in boiling salted water for 3 minutes.
  5. Arrange the zoodles on a plate, top with Bolognese sauce, and garnish with freshly grated Parmesan as desired. Enjoy!
