Healthy Omelette Muffins with Feta Cheese
Healthy doesn't have to be bland! A touch of feta cheese makes these protein-rich omelette muffins stand out. These delicious muffins are a perfect dinner that can be easily prepared. And of course, you can add other favorite ingredients.
Ingredients (makes 12 muffins):
- 6 eggs
- 1 cup chopped baby spinach
- 1/2 cup diced green and/or red bell pepper
- 8 quartered cherry tomatoes
- 1/2 cup finely diced shallots
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350°F.
- Grease the muffin tins, even if they are non-stick.
- Whisk the eggs with salt and pepper. Mix in the vegetables and feta cheese.
- Divide the mixture evenly among the muffin tins.
- Bake for 20 minutes, until the tops are lightly golden and the centers spring back when touched.
- Serve immediately or let cool.
Tips: Store in an airtight container in the refrigerator for 3 to 4 days, or in the freezer for up to 3 months. Enjoy your healthy omelette muffins!
