Wraps may seem like unhealthy fast food, but they can be nutritious when filled with fresh ingredients. They are quick and easy to prepare while providing you with a delicious, wholesome meal.
Ingredients (for 4 wraps):
2 chicken breasts
2 tbsp olive oil
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
1 onion
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1/2 tsp sugar
1 tsp vinegar
1 sprig cilantro
4 wheat tortillas
1 avocado
Salt and pepper to taste
Instructions:
Cut the chicken into strips and marinate with olive oil, cumin, chili powder, garlic powder, salt, and pepper.
Put the marinated chicken strips in a bowl and refrigerate for 4 hours to allow the flavors to develop.
Heat some oil in a non-stick pan and add the chicken. Stir-fry for 5 minutes and then remove from heat.
Peel and slice the onion into moderate-sized rings. Wash and slice the bell peppers into strips. Heat oil in the same pan where you cooked the chicken. Once the oil is hot, sauté the onion for 2 minutes over medium heat, then add sugar and vinegar to caramelize. Stir constantly to prevent sticking. After 5 minutes, add the bell peppers and stir. Add a little more olive oil if needed.
Once the bell pepper strips are nearly cooked, stir in the chicken and cilantro.
Heat the tortillas in the oven or on a pan, turning them after 2 minutes. Peel and slice the avocado into strips.
In the center of each tortilla, spread a spoonful of the chicken and bell pepper mixture, add a few avocado slices, and season with salt. Fold the tortilla and serve with a Mexican sauce.
