Sweet potato fries are a healthier alternative to regular potato fries. So when you have the choice, opt for these orange delights. And because mayo is a necessity, let's share a recipe for healthy mayonnaise too.
Ingredients (serves 4):
4 sweet potatoes
2 tbsp cornstarch
2–3 tbsp olive oil or canola oil
1 tsp paprika
1 tsp garlic powder
1 cup Greek yogurt
1 tsp mustard
1 tbsp lemon juice or apple cider vinegar
1 tsp olive oil
Salt and pepper to taste
Optional: Herbs of your choice for the fries and mayo
Instructions:
Preheat the oven to 430°F.
Wash or peel the sweet potatoes and cut them into even sticks.
In a bowl, dust the sweet potato sticks with cornstarch and mix well. Then add the oil, paprika, and spices and mix again.
Spread the sweet potato sticks in a single layer (no overlapping!) on a baking sheet lined with parchment paper.
Bake for about 30 minutes, turning them over after 15 minutes. For extra crispiness, turn on the broiler for the final 3 minutes.
For the mayonnaise, mix Greek yogurt, mustard, lemon juice, and olive oil well.
Sprinkle the finished fries with salt and serve immediately with the fresh yogurt mayonnaise.
