Homemade Sweet Potato Fries

Sweet potato fries are a healthier alternative to regular potato fries. So when you have the choice, opt for these orange delights. And because mayo is a necessity, let's share a recipe for healthy mayonnaise too.

 

Ingredients (serves 4):

  • 4 sweet potatoes
  • 2 tbsp cornstarch
  • 2–3 tbsp olive oil or canola oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 cup Greek yogurt
  • 1 tsp mustard
  • 1 tbsp lemon juice or apple cider vinegar
  • 1 tsp olive oil
  • Salt and pepper to taste
  • Optional: Herbs of your choice for the fries and mayo

 

Instructions:

  1. Preheat the oven to 430°F.
  2. Wash or peel the sweet potatoes and cut them into even sticks.
  3. In a bowl, dust the sweet potato sticks with cornstarch and mix well. Then add the oil, paprika, and spices and mix again.
  4. Spread the sweet potato sticks in a single layer (no overlapping!) on a baking sheet lined with parchment paper.
  5. Bake for about 30 minutes, turning them over after 15 minutes. For extra crispiness, turn on the broiler for the final 3 minutes.
  6. For the mayonnaise, mix Greek yogurt, mustard, lemon juice, and olive oil well.
  7. Sprinkle the finished fries with salt and serve immediately with the fresh yogurt mayonnaise.
  8. Enjoy your healthy, homemade treat!
