When the crust is made from cauliflower dough, pizza transforms into a healthy dish—especially if you avoid using too fatty cheese. The unhealthy part is often not the toppings but the white flour crust.
Ingredients (serves 4):
2 lbs cauliflower
4 eggs
1 cup grated Parmesan cheese
A bit of oregano (fresh or dried)
5 tbsp olive oil
A pinch of salt
2 cups tomato sauce
4 tsp dried basil
1 lbs mozzarella, sliced or shredded
Fresh basil leaves for garnish
Salt and pepper to taste
Instructions:
Cut the cauliflower into florets and process in a food processor in batches until it resembles "cauliflower rice".
Using a clean cloth, squeeze the processed cauliflower in portions until most of the liquid is removed.
In a large bowl, combine the cauliflower mixture with eggs, Parmesan cheese, herbs, 4 tbsp olive oil, and salt. Optionally, add ground almonds or oat flour until the dough is well-formed.
Preheat the oven to 430°F.
Form 4 round pizzas on baking sheets lined with parchment paper. Prebake each pizza for about 20-25 minutes until the edges are golden brown and the crust is firm.
Top each pizza with tomato sauce, herbs, and mozzarella. Bake for another 10-12 minutes until the cheese is nicely melted and slightly browned.
