Ingredients (for 4 servings):
2 tbsp vegetable oil
1 onion, diced
2 carrots, diced
1 cup frozen peas
2 cloves garlic, minced
2 cups uncooked rice (long-grain or jasmine works well)
3 cups vegetable broth or water
2 tbsp curry powder
1 tsp turmeric (optional, for color)
Salt and black pepper, to taste
Fresh cilantro, for garnish
Instructions:
Heat the oil in a large pan over medium heat. Add onion and carrots, cooking until softened, about 5 min.
Stir in the garlic, curry powder, and turmeric, cooking until fragrant, about 1 min.
Add the rice and stir to coat with the spices. Pour in broth and bring to a boil.
Reduce the heat to low, cover, and simmer until rice is cooked and liquid absorbed, about 18–20 min.
