Lemon herb pilaf is a light, fragrant dish that turns plain rice into something special. Infused with fresh herbs and bright citrus, it makes an excellent accompaniment to grilled meats, roasted vegetables, or can even be enjoyed as a standalone meal. Best of all, it uses pantry staples with just a few fresh ingredients to elevate the flavor. You can even swap the style of rice to use up whatever you already have on hand!

Ingredients (for 4 servings):

  • 2 tbsp olive oil or butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 ½ cups long-grain rice
  • 3 cups vegetable broth or chicken broth
  • Zest and juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill or mint, chopped
  • Salt and black pepper, to taste

Instructions:

  1. Heat the olive oil or butter in a medium saucepan over medium heat. Add the onion and garlic, cooking until fragrant and softened, about 3–4 min.
  2. Stir in the rice, toasting lightly for 1–2 min.
  3. Pour in the broth, add lemon zest, and bring to a boil. Reduce the heat, cover, and simmer for 15–18 min., until rice is tender and liquid absorbed.
  4. Remove from heat and fluff with a fork. Stir in the lemon juice, parsley, and dill or mint.
  5. Season with salt and pepper to taste before serving.
