This one-pan honey chicken thighs and rice is a hearty, affordable dish that doesn’t skimp on flavor. Chicken thighs are budget-friendly compared to chicken breasts, yet they stay juicy and tender while cooking with the rice. The honey glaze adds a touch of sweetness that balances perfectly with savory seasonings, making every bite rich and comforting. With minimal cleanup and maximum flavor, this is a winning weeknight dinner that feels gourmet on a budget.

Ingredients (for 4 servings):

  • 1 tbsp olive oil
  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 ½ cups rice (long-grain)
  • 3 cups chicken broth
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tsp paprika
  • ½ tsp dried thyme

Instructions:

  1. Heat the olive oil in a large skillet or oven-safe pan over medium-high heat. Season the chicken thighs with salt, pepper, and paprika, then sear skin-side down for 5–6 min. until golden brown. Flip and cook 2–3 min. on the other side, then remove from the pan.
  2. Add the onion and garlic to the same pan, cooking until softened, about 3 min. Stir in the rice and toast for 1–2 min.
  3. Whisk the chicken broth, honey, soy sauce, and thyme together, then pour into the pan. Stir to combine.
  4. Nestle the chicken thighs back into the pan, skin-side up. Bring to a simmer, then cover and reduce the heat to low. Cook for 25–30 min, or until rice is tender and chicken is fully cooked.
  5. Remove lid, let rest for 5 min, and serve warm.
