This tropical twist on a traditional cream pie uses coconut milk and shredded coconut for a flavor-packed filling. The no-bake crust keeps prep simple, and the whipped cream topping adds a cloud-like finish. It’s silky, sweet, and surprisingly light.

Ingredients:

  • 1 pre-made graham cracker crust
  • 1 (13.5 oz) can coconut milk
  • ¼ cup cornstarch
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup whipped topping

Instructions:

  1. In a saucepan, whisk the coconut milk, cornstarch, and sugar. Cook over medium heat until thick.
  2. Stir in the vanilla and shredded coconut. Let cool slightly.
  3. Pour into the crust, cover, and refrigerate 4 hours or until firm.
