Garlic Parmesan Quinoa Zucchini Fritters

Step 1

Grate the zucchini and place them in a colander with a half teaspoon of salt to drain the excess water. Let them sit for 10 minutes, then squeeze with paper towels or a clean dishcloth, getting as much liquid out as possible.

Meanwhile, prepare the quinoa. Combine water and quinoa in a small saucepan, bring to a boil and let cook for 10 minutes. Remove from heat, fluff the quinoa with a fork, and let it rest for about 10 more minutes.
