Cheese should always be stored in your fridge. It should be in a cool place, but it shouldn't be frozen or kept in too-cold temperatures. The optimal temperature for storing cheese is 40 °F. Any temperature around freezing will ruin the texture, especially when it comes to fresh, soft, artisanal cheeses.

Make sure you don't pack your cheese too tightly, so as to allow moisture to escape and prevent mold. For cheeses such as feta and mozzarella, make sure they are stored in enough brine. This will protect them from yeast or bacterial growth.

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
