Fennel And Pomegranate Quinoa Salad
This festive, crunchy side salad is a welcome healthy addition to Thanksgiving, with its protein-rich quinoa, crispy trio of fennel, radish and celery, sweet pomegranate seeds and fresh mint leaves. The only cooking required is for the quinoa. Then just toss it all together, and serve! Bonus: this dish can be made a few days ahead of time; just add the mint before serving.
