What started as a gourmet grilled cheese pipe dream has now become one of Birmingham, Alabama's most popular food-truck-turned-restaurants. In 2013, the MELT food truck, affectionately dubbed "Matilda" by its owners, parked itself around town slinging Texas Toast grilled cheeses and a handful of other cheesy specialties to hungry crowds. Just one year later, they opened their brick-and-mortar location in a former '50s gas station, turning it into a sort of part modern rustic, part industrial-style eatery with a full menu of cheese-centric goodies, including mac 'n cheese egg rolls and the classic diner patty melt.
