Mini Crustless Quiches

Go crustless with these healthy, mini quiches you can prepare ahead, to save you added stress on Thanksgiving morning. Mix together eggs, milk, cornstarch, cream, salt and nutmeg to make the batter. Cover and refrigerate overnight. The next day, saute chopped potatoes in a skillet until just starting to soften. Then combine with chopped red bell pepper and grated cheese. Distribute the potato preparation evenly throughout your greased muffin tin and top with a pinch of freshly chopped basil. Fill with the batter, and bake for 15 to 18 minutes in a preheated oven at 450 °F. Let cool for 10 minutes before removing the mini quiches from the tin, and serve.

  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
