5 Mistakes You Should Never Make When Buying Olive Oil

Going for Light, Pure, or Refined Olive Oil

Labels marked "pure" or "refined" are actually very misleading, because in reality they indicate a much lower quality olive oil. For the diet-conscious, "light" olive oil is not the way to go, either. All three of these words mean that the oil has been processed using heat, and mixed with lesser oils like sunflower or canola compromising both quality and flavor. Olive oil should have a robust, slightly peppery taste; when good quality olive oil is added to a dish, it should complement and intensify flavors, much like salt does.
