Bolani - Afghanistan

Despite being lesser known to world travelers due to the country's ongoing political turmoil, Afghan cuisine is rich, flavorful, fragrant and a very important aspect of the culture. With a combination of Middle Eastern and South Asian influences, it's both accessible and exotic at the same time. Bolani is a delicious traditional stuffed flatbread made from flour, salt, oil and water, shaped like a half-moon and stuffed with savory ingredients, such as potatoes, leeks, minced meat and other vegetables. It's usually fried, but it can also be baked for a lighter version and tastes delicious with creamy sauces or chutneys for dipping.
