Vegetable Enchilada Casserole

Preheat oven to 350°
- 1 T vegetable oil
- 2 cups diced zucchini
- 1 cup chopped onion
- 2 cups packed coarsely shredded spinach
- 1 cup frozen corn
- 2 cars (17.5 oz) enchilada sauce (Pace)
- 12 6” corn tortillas
- Chopped fresh cilantro
Baked Macaroni and Cheese

Melt butter over low heat
- 2 T butter
- ¼ cup flour
- 1 t. salt
- ½ t. dry mustard
- ¼ t. pepper
- 2 ½ c. milk
- 2 c. grated extra sharp cheddar
- 8 oz cooked macaroni
- ¼ cup bread crumbs
Mayonnaise Chicken

Mix the mayo, garlic, parsley, seasoned salt, and pepper in a bowl
- ½ cup mayonnaise
- 1 clove garlic, chopped fine
- 1-2 T chopped fresh parsley
- ½ t. Lawry’s seasoned salt
- Grated pepper
- 1 chicken breast, cut in half (2 pieces)
Eggplant Supreme

Peel eggplant and slice in ¼ inch slices
- 1 medium eggplant
- Flour
- Eggs
- Bread crumb
- Vegetable oil
- Butter
- 1 small onion, chopped
- 1 can chopped tomatoes
- 8 oz heavy cream
- Pepper to taste
- Italian seasoning (2 t.)
- 8 oz mozzarella cheese
- ¼ cup Romano cheese
Chocolate Pecan Pie

Cream sugar and butter
- 1 cup sugar
- ¼ cup melted butter
- 3 eggs, slightly beaten
- ¾ light corn syrup (Karo)
- ¼ t. salt
- 2T bourbon (or 1T)
- 1 t. vanilla
- ½ - ¾ c. chopped pecans
- ½ - ¾ c. chocolate chips
- 9” deep dish pie shell
Cissy's Chocolate Pie

Put first three ingredients in blender in order
- 6 eggs, room temperature
- 2 sticks butter, room temperature
- 1 ½ cup sugar
- 1 t. vanilla
- 5 squares melted unsweetened chocolate
- Extra-large graham cracker crust
Chocolate Bark

Line a jelly roll pan with foil
- 1 sleeve of saltines with salt
- 1 cup brown sugar
- 1 cup butter (2 sticks)
- 1 bag (12oz) chocolate chips
