Wonton Soup

In large saucepan, bring stock and 2 cups (500 mL) water to boil
- 4 cups chicken stock
- 2 heads baby bok choy
- 2 cups sliced mushrooms
- 1 pkg (300 g) frozen pork or shrimp wontons
- 1 cup bean sprouts
- 1 carrot, shredded
- 3 green onions, sliced
- 1 cup coriander or parsley leaves
French Onion Soup

On cutting board and using small knife, cut onions in half from stem to root end
- 2 onions (unpeeled)
- 1 clove garlic
- 1 tbsp (15 mL) butter
- 2 tsp (10 mL) granulated sugar
- 1/2 tsp (2 mL) dried marjoram
- 1/2 tsp (2 mL) pepper
- Pinch salt
- 4 cups (1 L) beef stock
- 1 tbsp (15 mL) balsamic or red wine vinegar
- 4 slices French bread
- 3/4 cup (175 mL) shredded Swiss cheese
Broccoli Cheese Soup

1. Combine chicken broth, water, half-and-half, cheese, flour, onion and pepper in a large saucepan
- 4 cups chicken broth
- 1 cup water
- 1 cup half-and-half
- 4 slices Kraft Cheddar Singles
- ½ cup all-purpose flour
- ½ teaspoon dried minced onion
- ¼ teaspoon ground black pepper
- 4 cups broccoli florets (bite-size pieces)
Harvest Chowder

Hearty Vegetable Chowder. Great for the cold winter months
- 2 tbsp. butter
- ½ cup chopped onion
- 4 cups chopped vegetables (carrots, potatoes, turnip, celery etc.)
- 2 cups canned tomatoes chopped
- 2 cups water or stock
- 1 bay leaf
- 1 tbsp. chopped fresh parsley
- ½ tsp. pepper flakes
- 1 tsp. salt
- 4 cups milk
- 1 cup cooked macaroni
Potato Soup

Nice creamy potato soup
- 6 slices thin bacon,
- 1 whole medium onion, diced
- 3 whole carrots, diced
- 3 stalks celery, diced
- 6 whole potatoes, diced
- 8 cups low sodium chicken broth
- 3 Tbsp all-purpose flour
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 teaspoon Salt
- black pepper To Taste
- 1/2 tsp Cajun Spice Mix
- 1 tsp minced fresh parsley
- 1 cup grated cheese
Fish Chowder

Nice White Fish Chowder
- 1-2 carrots chopped
- 4 potatoes cubed
- 1 onions diced
- 2 cups chicken stock
- 2 haddock fillets cut into bite sized pieces
- 2 tbsp flour and cold water to thicken.
Chalet Supper Soup

This simple chowder combines everyday cold-weather ingredients to make a satisfying supper
- 3 carrots
- 3 leeks (white and light green parts only)
- 1 thick slice ham (6 oz/170 g)
- 2 lb small red-skinned potatoes, scrubbed
- 2 tbsp butter
- 1 onion, chopped
- 1 tsp salt
- 3 cups milk
- 1½ cups wide egg noodles
- 1 pkg (10 oz/284 g) fresh spinach
- 1 cup finely shredded Gruyère cheese or extra-old Cheddar cheese
- ½ tsp pepper
Tomato Vegetable Soup

Great soup either served hot or cold
- 2 tbsp. vegetable oil
- 1 clove garlic minced
- 2 onions chopped
- 1 stalks celery sliced
- 2 carrots diced
- 7 cups chicken stock (or 7 cups water and 3 chicken bouillon cubes)
- 28 oz. (796 mL) can of tomatoes
- 1 Bay Leaf
- 6 splashes of Worcestershire Sauce
- 1 1/2 cups corkscrew pasta or macaroni
Fresh Tomato Soup with Gin

A favorite in long cool summer drinks, gin gives this refreshing soup an extra splash of flavor
- 2 tbsp butter
- 2 leeks, sliced (white parts only)
- 1 clove garlic, minced
- 1 carrot, sliced
- 1 tbsp finely chopped fresh basil (or, 1 tsp/5 mL dried)
- 1 tsp salt
- 1/2 tsp brown sugar
- pinch each black and pinch cayenne pepper
- 1 bay leaf
- 2 tbsp all-purpose flour
- 6 tomatoes (unpeeled), coarsely chopped (2-1/2 Ib 1.25 kg)
- 3 cups boiling chicken stock
- 4 1/2 cup gin
- sour cream
- basil sprigs

- 4 Peeled Potato’s peeled and diced
- 1 tbsp finely chopped fresh basil (or, 1/2 tsp/5 ml dried)

- 1 tbsp sugar
- 2 cups Water
- ½ tsp Oregano
- 2 bay leaf
- ½ Cup Grated Mozzarella
- 2tsp Worcestershire Sauce
