New York Salt Potatoes

1. Bring salt and water to a boil and add potatoes
- 8 cups of water
- 1 1/2 cups of kosher salt (add another cup if using the Diamond Crystal brand)
- 3 pounds well-scrubbed small red or white potatoes, as uniform in size as possible and with skins on
- 1 stick butter, cut into pieces
Papaya Salad

In a blender, blend the vinegar, sugar, salt and dry mustard together
- Dressing:
- 1 C Terragon Vinegar
- 1 C Sugar
- 1 Tbls Salt
- 1 tsp Dry Mustard
- 1 C Salad Oil
- 1/2 C Onion, chunked
- 3 Tbls Papaya seeds
- 5 drops of yellow food coloring
- Salad:
- 1 Head of Iceberg Lettuce
- 1 Head of Romaine Lettuce
- 1 Papaya, cubed
- 1 Avocado, cubed

- 2 Tbls Liquid Smoke
- 2 Tbls Soy Sauce
- 4 whole (unpeeled) bananas
- 1 head of romaine lettuce
Macadamia Nut Rice

Prepare Rice with the water and butter and cook until tender
- 1 1/2 C White Rice
- 3 C water
- 2 Tbls Butter
- 1/2 C Macadamia Nuts, chopped
- 1/2 C dates, chopped
- 2 Tbls Pimientos, chopped
Peanutty Coleslaw

Toss all ingredients together and top salad with whole roasted peanuts for looks
- 2 prepared bags of shredded coleslaw cabbage
- 1 C Poppyseed dressing
- 1 C Coleslaw dressing
- 3/4 C chopped roasted peanuts
- 3 green onions chopped
- 3 Tbls of Frank's Hot Sauce
Banana Bread

Heat oven to 350. Grease and flour Loaf Pan
- 2 1/2 C Flour
- 1 C Sugar
- 3 1/2 tsp Baking Powder
- 1 tsp Salt
- 3 Tbls Salad Oil
- 3/4 C Milk
- 1 Egg
- 1 C finely chopped Pecans (optional)
- 3 mashed very ripe Bananas
Split Pea and Potato Soup

Boil Peas and Potatoes at moderate heat in half of the broth until quite tender
- 1 lb bag of split peas, washed and drained
- 4 medium potatoes, peeled and cubed
- 8 C Beef broth
- 2/3 C onion, diced
- 6 Tbls Olive Oil
- 6 Tbls Butter
- 1 Tbls salt
Hot Artichoke Dip

Heat oven to 350. Mix all ingredients
- 1 can(14 oz) artichoke hearts, drained and chopped
- 1 C Miracle Whip
- 1 C Kraft 100% grated Parmesan Cheese
- 1 garlic clove, minced
- 1 Tbls Tabasco or Frank's
- dash of lemon juice

- 1/3 C butter (not margarine)
- 1 - 10 oz pkg of marshmallows
- 6 C corn flakes
- 1/2 tsp vanilla
- green food coloring
- red hot candies

Cream together eggs, sugars, vanilla, salt, baking soda, and butter
- 2 Eggs
- 1 C Brown Sugar
- 1 C Sugar
- 1 tsp Vanilla
- 1/2 tsp Salt
- 1 Tsp Baking Soda
- 1 C Butter
- 1/2 C Walnuts or Pecans or Macadamia Nuts
- 3 C Oatmeal
- 1 1/2 C Flour
- Frosting:
- 1 C powdered sugar
- 1 Tbls melted butter
- 2 tsp milk (add more if frosting is not pourable)
