Grandma Barbie's Gingerbread Cookies

These are a great make ahead Christmas cookie
- 8 cups flour
- 2 cups sugar
- 1/4 cup baking powder
- 1 Tbs salt
- 1 tsp. baking soda
- 2 tsp. clove
- 2 Tbs ginger
- 2 Tbs cinnamon
- 2 cups shortening
- Mix all those together well and then add:
- 1/3 cup molasses
- 1 egg
Italian Florentine Lace Cookies

One of our favorite Christmas cookies
- 1 3/4 cups sliced, blanched almonds ( about 5 oz.)
- 3 tbsp. AP flour
- Finely grated zest of 1 orange ( about 2 tbsp. )
- 1/4 tsp fine salt
- 3/4 cup sugar
- 2 tbsp. heavy cream
- 2 tbsp. light corn syrup
- 5 tbsp. unsalted butter
- 1/2 tsp. vanilla
Microwave Fudge

4 ingredients to a perfect fudge!!
- 12 ounces semi-sweet chocolate chips
- 14-ounce can sweetened condensed milk
- 1 1/2 cups chopped nuts (optional)-I use Walnuts
- 1 teaspoon vanilla extract
Best Darn Ham Sandwich

These are delicious served hot from the oven
- 2 -12 packages of sweet hawaiian rolls (the small dinner roll looking ones)
- 1 1/2 lbs of virginia ham (NOT honey ham)
- 12 slices swiss cheese
- 1 stick of real butter
- 2 teaspoons Worcestershire sauce
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon poppy seeds
GG's Curry Chicken

Best smells while cooking
- 4 boneless skinless chicken breasts, cubed
- 4 Tbls butter
- Marinade:
- 1/4 C soy sauce
- 1/4 C water
- 1 clove garlic, minced
- 1 tsp curry powder
- 1 tsp ground ginger
- 2 medium onions, sliced
Black Bean White Corn Salsa

Delicious as a dip for tortilla chips or as a filling inside soft tortillas or as a relish to any Mexican meal
- 2 15oz cans of black beans-drained
- 1 C white corn-thawed
- 1 Red diced Belled pepper
- 1/8 C red wine vinegar
- 1/2 C olive oil
- 1 large clove of garlic-crushed/minced
- 1 anaheim chili-seeds removed
- 1/4 C fresh cilantro-chopped
- 1/8 tsp cayenne pepper
- 1/4 tsp cumin powder
- 1/2 tsp salt
- 1 avocado diced
- 1 tomato, diced
Almond Butter Finger Cookies

You may want to double this one
- 1 1/4 C softened REAL butter (do NOT use margarine)
- 2 tsp vanilla
- 1 tsp almond extract ( a must have)
- 4 C flour
- 2 C chopped pecans
- 1/2 tsp salt
Spinach Bacon Salad

Hard boil eggs and chill precook bacon strips and slice into 1-2" slices Assemble salad ingredients
- 10ox fresh spinach, rinsed and drained
- 1 lb bean sprouts, rinsed and drained
- 1 8oz can sliced water chestnuts, drained
- 8 strips of cooked bacon
- 4 hard boiled eggs, sliced
- Dressing:
- 1/2 C cooking oil (canola)
- 1/8 C Red Wine Vinegar
- 1/6 C Ketchup
- 1/2 C finely grated onion (*add this last)
- 3/8 C sugar
- 1/4 tsp salt
- 1 Tbls Worchestershire sauce
Oriental Chicken Thighs

In large skillet over medium heat, brown chicken in oil for 18-20 minutes or until juices run clear
- 5 bone-in (or boneless) with skin OFF chicken thighs
- 5 tsp olive oil
- 1/3 C warm water
- 1/4 C packed brown sugar
- 2 Tbls orange juice
- 2 Tbls soy sauce
- 2 Tbls Ketchup
- 1 Tbls white vinegar
- 4 cloves of minced garlic
- 1/2 tsp crushed red pepper flakes
- 1/4 tsp chinese 5-spice powder
- 2 tsp corn starch
- 2 Tbls cold water
Party Tetrazzini

Saute onion in butter until tender
- 2 Tbls Chopped onion
- 1 Tbls butter
- 1 can Cream of Mushroom soup
- 1/2 can of water
- 1/2 C shredded cheddar cheese
- 1 Tbls cooking sherry
- 1 C diced cooked chicken, ham, and/or turkey
- 2 Tbls chopped pimiento
- 1 package spaghetti noodles-cooked
