Tofu McMuffin

This is a vegan version of an egg mcmuffin
- 1 pkg extra firm Indian tofu, cut into 6 square blocks
- 1/3 cup nutritional yeast
- 2 tbsp turmeric
- 2 tbsp garlic salt
- 2 tbsp onion powder
- 1 cube mushroom bullion, broken apart
- SANDWICH
- 6 english muffins, halved and toasted
- Nayonnaise or mayonnaise
- Dijon mustard
- 1 tomato, sliced
- 1 onion, sliced and sauteed
- 6 soy cheddar slices
- Vegan simulated bacon bits
Lemon Breakfast Crepes

This is a family recipe that my mom taught me to make as a child
- 3 tsp flax and 4 tbsp water
- 1 cup flour
- 1 1/2 ccup coconut milk or soymilk
- 2 tbsp vegetable oil
- 2 tsp vanilla extract
- 1 tsp almond extract
- SAUCE
- 1 cup water
- 1/4 cup lemon juice or any other juice
- 1 cup sugar
- 2 tbsp cornstarch mixed in 1/4 cup water
- 1 tsp vanilla extract
Vegetarian Bacon Cheddar Waffles

These waffles are so good that meat-eaters won't notice that it's vegetarian
- 2 cups soymilk
- 1/4 cup balsamic vinegar plus more to serve
- 1/4 cup vegetable oil
- 1 tsp creole hot sauce
- 1 tbsp brown sugar
- 2 1/2 cups AP flour
- 1/2 tsp salt
- 2 tsp baking powder
- 2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1 tsp basil
- 1/4 cup nutritional yeast
- 1 lg sweet onion, diced and sauteed
- 1 cup vegan simulated bacon bits
- 1 cup old cheddar, shredded
