- 1 package (12 ounce) JOHNSONVILLE® Cajun Style Chicken Sausage , cut into half-moon slices
- 3 pounds red potatoes, cut into 1 inch pieces
- 1/2 cup olive oil
- 1/3 cup white wine vinegar
- 1 tablespoon hot sauce (such as Frank’s RedHot pepper sauce)
- 2 tablespoons Dijon mustard
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 green bell pepper, chopped
- 1 cup celery, chopped
- 1 bunch green onions, sliced
Spinach and Ricotta Dumplings

Bring a large, wide pot of salted water to a simmer
- Kosher salt
- 1 10 -ounce package frozen chopped spinach, thawed and squeezed dry
- 1 1/2 cups whole-milk ricotta cheese
- 1 cup grated parmesan cheese
- 6 tablespoons all-purpose flour, plus more for rolling
- 2 large eggs
- Freshly ground pepper
- Pinch of freshly grated nutmeg
- 2 cups prepared marinara sauce
- 2 tablespoons unsalted butter, cut into pieces
- Crusty bread, for serving
Berry Coffee Cake

Preheat oven to 350 F. Grease pan and dust with flour
- Filling:
- 1 1/4 cups berries
- 1/2 cup nuts
- 3 Tablespoons sugar
- 1 1/2 teaspoons cinnamon
- Cake:
- 2 1/4 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/4 cups sugar
- 1 cup butter, softened
- 1 teaspoon vanilla
- 2 eggs
- 8 oz. sour cream
- Sugar glaze(optional):
- 1 1/2 cups powdered sugar
- 3-4 teaspoons water or milk

Make the sauce: Mix the mayonnaise, horseradish, ketchup and Cajun seasoning in a bowl; set aside
- For the sauce:
- 1/4 cup mayonnaise
- 1 tablespoon drained horseradish
- 2 teaspoons ketchup
- 1/4 teaspoon Cajun seasoning
- For the pickles:
- Peanut or vegetable oil, for frying
- 1/2 cup all-purpose flour
- 1 3/4 teaspoons Cajun seasoning
- 1/2 teaspoon Italian seasoning
