Pancake Batter Donuts

Preheat the oven to 350 degrees
- Baking spray with flour
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon kosher salt
- 1 extra-large egg, lightly beaten
- 1 1/4 cups whole milk
- 2 tablespoons unsalted butter, melted
- 2 teaspoons pure vanilla extract
- For the topping:
- 8 tablespoons (1 stick) unsalted butter
- 1/2 cup sugar
- 1/2 teaspoon ground cinnamon

This is a twist on the old standby of Chicken Drumsticks, but they become mostly a boneless treat, suitable for all...
- 8 Fresh Chicken Legs, uniform sized if possible
- 1 pkg. Chicken Fry Mix
- 1 Egg beaten with 1/4 cup milk
- Marinade:
- 1 Cup Buttermilk (or 1 cup milk with 2 TB vinegar at room temp. for 30 minutes)
- 1/4 Cup Hot Sauce
- 1 tsp Garlic Powder
- 1 tsp Black Ground Pepper
- - Mix the marinade mix in a bowl, pour over prepared chicken legs and refrigerate 30 minutes
Italian Sausage Biscuit Casserole

Savory hearty dish can be served for breakfast brunch or a main meal in itself
- 1 pound loose Italian sausage (hot sausage also works)
- 2 cloves fresh garlic,finely chopped
- 1 can (15 ox) white beans (canelli, great northern, etc)
- 1 can (15-22 oz) diced tomatoes
- 2 Cups of Frozen Pearl onions, thawed (1/2 bag) or 1 medium onion, minced
- 1 tsp rosemary (or 1 TB fresh)
- 1 small bell pepper. minced
- 1 8 oz box of cheese biscuit mix (or make your own) to make Aprx. 12 biscuits
- 1/4 cup shredded cheese (cheddar or mozzarella)

- 1 1/2 cups cooked sweet potatoes, from a casserole
- 1 (7 1/2 ounce) package cornbread mix
- 1/2 cup milk (or substitute 1/4 cup heavy cream)
- 1 egg
- 1/4 cup vegetable oil
Roasted Turkey Enchilada Bake

- 2 cups chopped leftover roasted turkey (or 2 pounds cooked shredded Chicken or cooked drained Ground Beef)
- 1 jar (16 oz.) Thick & Chunky Medium Salsa
- 1 can (15 oz.) black beans, rinsed
- 1 cup frozen corn
- 1 can Unsalted Diced Tomatoes, Drained
- 1-1/2 Tbsp. chili powder
- 1 Teaspoon Garlic Powder
- 4 to 6 flour tortillas (8 inch)
- 3/4 cup Sour Cream
- 2 to 2 & 1/2 cups Mexican Style Shredded Four Cheese or any shredded yellow cheese
- 1 Cup White Shreeded Cheese like Montrey Jack (Optional)

- 2 tablespoons milk
- garlic & onion powder, to taste
- salt and pepper, to taste

- 3/4 pound thinly sliced corned beef or pastrami (shaved)
- 1 cup rinsed and well-drained sauerkraut

- 4 cups Swiss cheese, shredded
