Chipotle Rice Copycat

In a saucepan, heat up the oil on low
- 1 tsp vegetable oil
- cup basmati rice
- 1 lime, juiced
- 1 cup water
- ½ tsp salt
- As much cilantro as you want!
Corn Salsa like Chipotle makes it

Mix it all together, taste, add if needed
- 2 cups frozen or fresh corn
- ¼ cup fresh cilantro
- 2 tsp finely chopped jalapeño, with or without seeds
- 1-2 tsp sliced green onions (just the tops)
- ½ tsp kosher salt
- 2-3 tsp lime juice
Feta Spread

Heat oil over medium heat
- ¼ cup extra-virgin olive oil
- 1 diced red bell pepper
- 2 cloves of garlic, sliced or minced
- 1 lb feta
Vegetarian Mashed Potatoes

Place potatoes and 2 tbsp salt in a pot and cover with water
- 5 lb potatoes, peeled and cubed
- 3 tbsp salt
- 12 tbsp unsalted butter, softened and cubed
- ½ to 4/5 cup heavy cream
- 1 cup sour cream
- ¾ tsp black pepper
Fruit Dip

Mix first three ingredients together
- 1/2 cup raspberry cream cheese spread (from 8 oz. container), softened
- 1/2 cup marshmallow creme
- 1 container (6 oz.) Yoplait lemon burst yogurt (or 3 oz. lemon and 3 oz. raspberry)
- Assorted fresh fruit

Pretzel Roll Croissants

Heat oven to 425
- 10 cups water
- ¼ cup baking soda
- 1 egg
- 1 tbsp water
- 1 can Pillsbury refrigerated crescent dinner rolls
- 4 tsp sesame seed
- ½ tsp kosher salt
Twisted Croissants

Take the dough out, leave in sheet form
- 1 can of Pillsbury croissants
Tilapia, Pan-Seared

Rinse tilapia fillets in cold water and pat dry with paper towels
- 8 (4 ounce) fillets of tilapia
- salt and pepper to taste
- 1 cup all-purpose flour
- 2 tbsp olive oil
- 1/4 cup unsalted butter, melted

Preheat oven to 350. Grease and flour three 7x3 inch loaf pans
- 1 (15 ounce) can pumpkin puree
- 4 eggs
- 1 cup vegetable oil
- 2/3 cup water
- 3 cups white sugar
- 3 1/2 cups all-purpose flour
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/4 tsp ground ginger
