Marble Pumpkin Chocolate Bread

Adjust oven rack to middle position and preheat oven to 350°F
- 1 3/4 cup granulated sugar
- 3/4 cup canola oil
- 2 large eggs
- 1 1/2 cups canned pumpkin
- 2 cups all-purpose flour
- 1/2 plus a scant 1/8 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground clove
- 3 tablespoons cocoa powder
- 2 tablespoons milk
German Chocolate Cookies

Preheat oven to 350 degrees F
- 1/4 cup butter, softened
- 3/4 cup packed brown sugar
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1 egg
- 1 tsp vanilla
- 2/3 cup all-purpose flour (I used unbleached)
- 2/3 cup rolled oats
- 1/4 cup unsweetened cocoa powder
- 1 cup chocolate chips
- 1/3 cup flaked coconut
- 1/3 cup chopped pecans, toasted
- Optional garnish: flaked coconut and chopped pecans
Harvest Loaf

Preheat oven to 350 degrees, and spray three mini loaf pans with pam
- 1/2 c. Butter
- 1 c. sugar
- 3/4 c. Pumpkin
- 1 t. Cinnamon
- 1/2 t. Nutmeg
- 1/2 t. Cloves
- 1/4 t. Pumpkin Pie spice
- 1/4 t. Ginger
- 2 eggs
- 1 1/2 c. Flour
- 1 t. Soda
- 3/4 c. Chopped pecans or walnuts

Chocolate Zucchini Bread

Combine oil, sugars and vanilla
- 1/2 cup canola oil
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1 cup shredded zucchini (with skin)
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1 cup chopped walnuts
- 2 cups Chocolate Chips
Chocolate Chip Gingerbread Cookies

Preheat the oven to 325. Line a baking sheet with parchment paper
- 1 stuck unsalted butter, softened
- 1 teaspoon ground ginger 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1/4 cup molasses 1 egg 1 to 2 tablespoons water 1 1/4 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons cocoa powder
- 1 teaspoon baking soda
- 6 ounces semisweet chocolate chips
Quick and easy mini Cheesecakes with Blueberry toping

Preheat oven to 350, and line 9 muffin cups with paper liner and spray with pam
- Cheesecakes:
- 8 graham crackers (Crushed into crumbs)
- 4 T. butter
- 8 oz. neufchâtel cheese
- 1/4 cup sugar
- 1 egg
- 1/2 t. lemon juice
- 1/2 t. lemon zest
- Blueberry topping:
- 16 oz. frozen blue berries
- 1/4 cup sugar
- 1/2 cup water
- 3 t. cornstarch
Carrot Cake with Cream Cheese Frosting

Preheat oven to 350F. Prepare two 8 or 9-inch round cake pans by spraying them lightly with pam
- For cake:
- 2 1/2 cups flour
- 1 1/4 tsp baking powder
- 1 tsp baking soda
- 1 1/4 tsp cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp ground cloves
- 1/2 tsp salt
- 1 pound carrots peeled and grated
- 1 1/2 cups sugar
- 1/2 cup light brown sugar, packed
- 4 eggs
- 1 1/2 cups vegetable oil
- For frosting:
- 8 ounces cream cheese , softened but still cool
- 5 tablespoons unsalted butter softened, but still cool
- 1 Tbs sour cream
- 1/2 tsp vanilla extract
- 1 1/4 cups powdered sugar

Line an 8 inch pan with foil, leaving overhang on all four sides
- 2 cups semi-sweet chocolate chips
- 1 (14 oz) can sweetened condensed milk
- 2 t. vanilla extract
- 6 oz. white chocolate
- 1 T. Peppermint extract

To make the pie crust, combine the flour and salt in a medium bowl
- For the pie crust:
- 1 1/4 cup (150 grams) all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (113 grams) unsalted butter, cold and cut into cubes
- 1/4-1/3 cup (60-80 ml) water
- For the filling:
- 2/3 cup (65 grams) granulated sugar
- 1/3 cup (40 grams) all-purpose flour
- 1/4 teaspoon ground cinnamon
- 6 cups peaches (1 kg, about 6-8 medium), sliced (skins removed optional)
- 1 teaspoon lemon juice
- For the cobbler topping:
- 1 cup (120 grams) all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1.2 teaspoon salt
- 3 tablespoons (42 grams) unsalted butter, cold and cut into cubes
- 1/2 cup (120 ml) buttermilk, cold
- Cinnamon sugar, for sprinkling (optional)
