- 2 eggplants
- 1 lb ground meat (beef or pork)
- 1 onion
- 1 clove of garlic
- 1 knob of butter
- 1 package of mozzarella balls
- 1 bouilon cube
- 1 can diced tomatoes with basil prepared

Cut the eggplants in two, scoop out inside and chop finely.
Sauté the onion and garlic (finely chopped). Add the ground meat, chopped eggplant, salt, pepper, bouillon, add tomato, cover and simmer. Add the mozzarella balls and wait until they melt.
Stuff the eggplant with mixture and bake 20 minutes watching. Serve with bread and a good rosé.
