Roasted Quail with Peas

  • quail stuffed with foie gras (ready to cook)
  • onions
  • bacon
  • mushrooms
  • white wine
  • duck fat
  • chicken bouillon (2 cubes)
  • vegetables - I used peas but you can use whatever you have on hand

Step 1

Fry the quail in a mixture of duck fat and oil, with onions and sprinkle with white wine and a glass of water mixed with dissolved bouillon cubes, reduce heat and simmer for 15 minutes, add selected vegetables and serve ... a treat!!
