Carrot Halwa

Ingredients

  • 2 cups shredded carrots
  • 2 cups whole milk
  • 3 tbsp. unsalted butter
  • 1/4 cup sugar
  • 1/2 tsp. cardamom powder
  • chopped cashew nuts & sliced almonds (for garnish)

Preparation

Step 1

Boil the milk in a non-stick pan on medium-high heat, stirring continuously until it is reduced to approximately 1 cup. Set aside.

Step 2

Melt the butter in a frying pan on medium heat.

Step 3

Add shredded carrots in the pan and stir-fry for approximately 7-8 minutes until carrots are slightly chanced in color.

Step 4

Add milk and cook for additional 8-10 minutes. Stir well.

Step 5

Add sugar and cardamom powder and stir-fry for another 3-4 minutes until the halwa starts to leave the side of frying pan.

Step 6

Let it cool for couple minutes and spread the halwa evenly on a lightly greased plate and cut into square pieces.

Step 7

Finally, garnish with cashew nuts and sliced almonds.
